Doneness Reference for Steak

People are often curious about the different levels of doneness for their steak. Below is a handy reference guide:

Rare

– Purplish red, barely warm, and very, very juicy. 60°C (140°F)

Medium-Rare

– Red, warmer, not quite as juicy. 63°C (145°F)

Medium

– Pink, warm, and moist. 71°C (160°F)

Medium-Well

– Slightly pink, and very warm. 74°C (165°F)

Well Done

– Warm throughout, with no trace of pink. 77°C (170°F)
